Four Seasons Hotel Singapore - Snowskin collection on two plates with leaves as decor

Four Seasons Hotel Singapore’s Snowskin collection

There’s a certain charm about Four Seasons Hotel Singapore’s Jiang-Nan Chun that draws us to its mooncakes every year. It excels in both the Baked and Snowskin variety – often with surprises that tickle the palate.

We love perennial favourites such as Silver Lotus Paste with Melon Seed, Silver Lotus Paste with Single Yolk and Silver Lotus Paste with Double Yolk. Top quality ingredients feature heavily here including premium silver lotus. That the lotus is young and fresh also means less oil and sugar is required to create the paste – really healthy hack! Jiang-Nan Chun’s signature Peking Duck, prepared in a mesquite wood-fire oven, is so well-loved that it has spawned a mooncake flavour – we wait with bated breath the return of the signature Smoked Duck with Assorted Nuts and Lime!

Snowskin flavours such as Bird’s Nest with Custard, Mao Shan Wang Durian, Hazelnut Royaltine Chocolate are excellent choices that score on both the creativity and the flavour front.  This year’s refined debutante is the Litchi with Raspberry and Rose which comes gloved in a soft, rose-infused snowskin with the raspberry-rose gelée gem shrouded in a vanilla-litchi pastry cream.

Four Seasons Hotel Singapore recommends pairing the exquisite mooncakes with organic sparkling teas by COPENHAGEN, a Danish label developed by award winning sommelier, Jacob Kocemba and business partner Bo Sten Hensen. Options include LYSERØD made with exclusive white Silver Needle tea for a nice and soft mouthfeel as well as GRØN (5% vol), an alcoholic sparkling tea which brings to mind green tea and citrus notes.

Despite social distancing, gifts bearing food are still a fantastic way to stay in touch with friends and fam. Four Seasons’ mooncakes are placed in elegant botanical-inspired gift boxes; they have powder blue embroidered receptacles that are prized for their longevity as jewellery boxes after Mid-Autumn Festival.

Early Bird Special: order before 6 Sep 2020 for a 20% discount off mooncakes.

Heritage is in full bloom with four new voluptuous flavours on offer. Take these snowskin mooncakes home in a fabulous tingkat carrier – a real pastel dream come true.

This Mid-Autumn Festival, InterContinental Singapore’s collection of novelties are informed by the luxury property’s rich heritage and deep-seated roots in the historic and cultural district of Bugis. Crafted around classic Peranakan desserts, the new snowskin mooncakes are delicately formed in Man Fu Yuans signature blooming rose silhouette. Heritage is in full bloom with four voluptuous flavours on offer. Bite into the Chendol and you will detect gula melaka with red bean, coconut and pandan jelly. The Pulot Hitam is centred around robust dark glutinous rice and flavoured with candied longan and coconut. The Durian Pengat filled with durian cream just requires a little lift from gula melak and butterfly pea. Finally, the Pandan and Coconut Kaya, while familiar, is a classy concoction of pandan kaya jam and a coconut kaya jam centre.

Man Fu Yuan is a stalwart in the Chinese fine dining scene – and a recipient of the Michelin plate – so it wouldn’t be complete without a respectable selection of baked mooncakes. There are six flavours in all, ranging from White Lotus Paste with Double or Single Yolk  to Low-Sugar White Lotus Paste with Macadamia Nuts or Assorted Nuts.

The elegant tingkat carrier traditional tiered lunch box   designed to house the mooncakes is simply très chic and sustainability-minded! We love the striking blush and turquoise hues, along with subtle Peranakan motifs reminiscent of the hotel’s facade, and can already envision ourselves bringing this tingkat out for the next takeout meal.

White Lotus Seed Paste with Grand Marnier Praline Mooncake: the orange accent of the Grand Marnier really comes through in this new snowskin flavour.

Holiday Inn Singapore Atrium and its award-winning Xin Cuisine Chinese Restaurant have two new snowskin flavours that have us looking forward to 1st October 2020. Dim Sum Chef Cheung Kin Nam was instrumental in giving us the White Lotus Seed Paste with Grand Marnier Praline Mooncake and Green Tea Paste with Jackfruit Praline Mooncake (and also the baked goodies) – perfect ending to any dinner with family or friends.

Smash hits from previous years like the Low Sugar White Lotus Seed Paste with Double Yolk Mooncake, as well as the Peranakan Durian Snowskin Mooncake have also been made available this year.

Raffles Hotel Singapore’s Apricot Sourplum Snowskin mooncakes

Raffles Hotel Singapore returns with a broad range of mooncake flavours this season – five refreshing snowskin mooncakes and three treasure-baked ones. Mooncakes are beautifully presented in a creamy ivory box designed with gold lotus flowers and palm leaves as an homage to the Grande Dame and Mid-Autumn Festival.

There are two new handcrafted creations this year.  MasterChef Jereme Leung’s signature creation Plum-pickled Tomatoes with Crunchy Turnip & Sweet
Vinegar has been a crowd favourite so it’s not hard to see why it made its way
into the Apricot and Sourplum Snowskin Mooncake. Fresh apricot purée,
sourplum and white chocolate are simply perfect together in a bite.

The Yuzu and Osmanthus Truffle Snowskin mooncake is a celebration of the rich tart and floral flavours of the aromatic yuzu and the divine blend of osmanthus tea leaves heightens its natural sweetness. Raffles’ signature favourites such as Champagne Truffle Snowskin Mooncake, Earl Grey Tea and Pearl Snowskin Mooncake and Cognac Truffle Snowskin Mooncake as well as Classic Baked Mooncakes also provide a good reason for you to drop by at the Raffles Mooncake Booth to pick up a box or two for Mid-Autumn parties.

Baked Mooncake with Assam Lotus and Mango

The hawker scene is a huge part of Singapore’s cultural fabric so it’s great when a hotel like The Fullerton Bay Hotel Singapore celebrates it, drawing on the rich history of the area and vibrant street food scene. An exciting new launch, The Clifford Pier Mooncake Tingkat features four deliciously inspired flavours of baked mooncakes in a sleek, updated tiffin carrier beautifully adorned with orchids. The four characters 花好月圆 also line up vertically to mean happiness and perfection, designed to bring a broad smile to your guest or the recipient of this wonderful gift.

The interplay of rich and robust flavours is evident from the get-go. The tangy flavours of tamarind cut through the sweetness of mango and and smooth lotus paste in the Baked Mooncake with Assam Lotus and Mango. Clever! The Baked Mooncake with Pandan Coconut and Chendol, meanwhile, combines local flavours with lotus paste; studs of chendol is layered for a richer mouthfeel.

Under the deft hands of Fullerton’s chefs, classics are given a new lease of life and they are a bit of a head-turner, really. For instance, the Baked Mooncake with Mixed Nuts comes laced with a subtle – and a brand new flavour profile – satay sauce. Spicy dried shrimp sambal takes centrestage in Baked Mooncake with Salted Lotus and Hae Bee Hiam, a blockbuster that panders to an audience with a penchant for an addictive melange of sweet, savoury and spicy flavours.

Mandarin Oriental, Singapore’s Cantonese restaurant Cherry Garden looked to tea for inspiration for its 2020 collection this season.

As part of its baked mooncake series, oolong, given its toasty,  tannic undertones and fragrance, was chosen to star in the Lugu Oolong Tea with melon seeds mooncake. Equally memorable is their other new creation Matcha Red Bean as green tea and red beans is a match made in heaven.

The snowskin series features a pair of equally delectable treats that only an esteemed ingredient like tea can offer: Oolong Tea Infusion with Dried Apricot and Pumpkin Seeds as well as Exotic Passion Fruit with Candied Pineapple and Mango Mochi. It is worth noting that for the latter, the pineapple chunks are sweetened for eight hours and dried for two days; the springy mochi, made from mango and passion fruit juice, enhances the tangy notes of this inspired morsel of goodness.

Guests can be assured favourites from previous years – the Low Sugar Silver Lotus Paste with Double or Single Yolk as well as the Lychee Martini and Chocolate Truffle – are still available this year.

Basilico Executive Chef Angelo Ciccone took prized Amarena cherries from Bologna and paired them with Sicilian pistachios and the honeyed sweetness of dried figs in the Pistachio, Fig and Amarena Cherry snowskin mooncake.

It’s all hands on deck for Regent Singapore this year as its award-winning dining establishments come together yet again to contribute to the luxury hotel’s colourful canvas of mooncake offerings. Broad, lively strokes, at times vivid but always brilliant. The partnership between restaurants had its roots firmly plated in in 2018, when Summer Palace’s Chinese Dim Sum Chef Leong Kwok Sing partnered with Manhattan, then #3 on The World’s 50 Best Bars, to introduce two Manhattan-exclusive snowskin mooncake variants with a barrel-aged Sazerac 6-year-old rye and La Louisiane Cocktail. The alcoholic cores were a hit against creamy coffee and yuzu fillings.

This year, head bartender of Manhattan, Sophia Kang, once again looked to the bar’s impressive collection of dark rums to dream up a tropical combination of plantation rum, spiced coconut and yuzu in the Macapuno mooncake.

Basilico Executive Chef Angelo Ciccone took prized Amarena cherries from Bologna – a sour, dark varietal of fruit grown in Bologna famed for their luscious notes – and paired them with Sicilian pistachios and the honeyed sweetness of dried figs in the Pistachio, Fig and Amarena Cherry snowskin mooncake. The Double Espresso and Almond Marzipan snowskin variant is truly the mooncake equivalent of enjoying an espresso standing up in an Italian coffee bar, almond pastry in hand.

Tea Lounge‘s contribution to the canvas is a Green Tea with Melon Seeds snowskin mooncake. Crafted with the finest green tea from tea partner Gryphon, the earthiness of the filling complements the crunch of toasted melon seeds.

Michelin one-star Summer Palace’s Chef Leong took care of the classics and gave us the Signature Black Sesame Paste featuring a stunning juxtaposition of cushion-soft pearlescent skin and a jet-black filling of finely ground black sesame. Other mooncakes on offer include the White Lotus Paste with Salted Egg Yolk and Melon Seeds and Mao Shan Wang Durian. Chef’s new Orange and Pine Nuts snowskin mooncake features a smooth tangy filling studded with buttery pine nuts for crunch and is clad in a coral pink hue.

As you enjoy the mooncakes at home, watch the elegant box transform into a lantern, illuminating yet another special Mid-Autumn evening for you and your companions.

Early Bird Special: All 4 or 8-piece mooncake box purchases are entitled to a 30 per cent Early Bird discount before 23 August 2020.

Those who dare to dream will be rewarded – this seems particularly true for the team at the award-winning Jade restaurant at The Fullerton Hotel Singapore. A little boldness and creative spark goes a long away as evident in the Jade Signatures Mooncake Collection 2020 which features delicious new Singapore-inspired flavours such as Yuan Yang and Chin Chow.  The former pairs the rich, thick flavour of Nanyang-style coffee with Hong Kong-style milk tea for a winning combination; the latter offers a tangy, fruity update on the popular local grass jelly beverage. Also included are Orange with Salted Kumquat Snow Skin and the classic White Lotus Paste with Single Yolk Snow Skin. Truth be told, we are rather tempted to devour these little morsels during the National Day long weekend ahead of Mid-Autumn!

The Jade team ups the ante on baked mooncakes this ear with two new flavours. The Red Bean and Pineapple with Tangerine Peel, is an inspired spin on the traditional tau sar bun (steamed red bean bun); pineapple paste gives it a great tang followed through with the scent of tangerine peel. For a style of mooncake big on textures and nuttiness, we recommend the Baked Mixed Nuts with Black Dates, a lovely medley of melon seeds, macadamia nuts, walnuts, sesame seeds and pine nuts studded with dainty morsels of black dates and candied tangerine peel, encased in delicate baked pastry.

Finally, go to town with The Fullerton 15 Treasures Premium Gift Set. Available in limited quantities, the gift set features a giant baked mooncake with white lotus seed paste and eight egg yolks as its centrepiece, symbolising the full moon on the 15th day of the eighth lunar month. It is surrounded by 14 baked mooncakes in different flavours. When presenting this gift to your recipient, you will find the alternating figures of celestial hare, citron fruit and firefly on their crust – variously signifying bliss, well wishes and light – a great conversation starter.

Celebrated as one of the most popular purveyors of mooncakes in Singapore, Cantonese restaurant Golden Peony at Conrad Centennial Singapore is synonymous with premium style.

New flavours, very likely a hit, this year are the Sea Salt Gula Melaka and Purple

Hazelnut Crunch. Baked mooncakes generously filled with lotus paste and either
single or double yolks are also popular choices. These decadent morsels are
packaged in mooncake boxes in deep crimson red – look out for dancing phoenixes and butterflies amidst Chinoiserie-style florals!

Hai Tien Lo’s Four Treasures Baked Mooncakes

Pan Pacific Singapore’s award-winning Hai Tien Lo is launching a wide range of exquisite Mid-Autumn treats just in time to celebrate the annual festival that is so central to family and friendly reunions – eleven handcrafted baked and snowskin mooncakes to be exact.

There are three new snowskin varieties that demonstrate a sense of imagination. The Matcha Black Sesame snowskin combines aromatic matcha powder and white chocolate with rich nutty black sesame paste. We also like the sound of Soursop Lychee snowskin, a refreshing combination of soursop puree, lychee puree and fresh soursop bits. The third new interpretation is a tart Raspberry Chocolate snowskin where your palate will be rewarded with raspberry crunchy pearls and delicious ruby chocolate. Hai Tien Lo’s best-selling Mao Shan Wang Durian snowskin and decadent Hazelnut Yuzu are also back this year. The Four Treasures Snowskin Mooncakes set gives guests the option of enjoying a box of four snowskin varieties.

Treasured flavours such as the classic Signature White Lotus Seed Paste available with both Single Yolk and Double Yolk are part of the line-up of baked mooncakes this year, as are the well-loved Charcoal Black Sesame Seed Paste with Melon Seeds and Assorted Nuts with Chicken Ham. Low-sugar alternatives are available in the form of White Lotus Seed Paste with Macadamia Nuts and Jade Paste with Melon Seeds. Why have one flavour when you can try all four? The Four Treasures Baked Mooncakes set is designed with variety in mind.

Hai Tien Lo Executive Chef Ben Zeng has masterfully crafted a

Six-Course Mid-Autumn Topaz set menu showcasing exquisite Cantonese dishes prepared with premium ingredients. Designed to be enjoyed in the comfort of your own home, a noteworthy highlight is the Pan-fried Foie Gras and Sliced Crispy Barbecued Suckling Pig stuffed with Prawn Paste; a side of fruits and salad help cut through the richness of foie gras in this indulgent fusion offering.

Tip: Guests placing advanced orders with eligible credit cards from now till 31 August 2020 will enjoy an exclusive early bird deal of 25% savings on all prepaid orders; up to 15% savings on orders placed between 1 September to 1 October 2020.

Hai Tien Lo’s best-selling Mao Shan Wang Durian snowskin makes a comeback this year.

Crowne Plaza Changi Airport’s new snowskin flavours reflect the colourful tapestry of Singaporean desserts.

Crowne Plaza Changi Airport dreamed up a number of novelties to honour the festival this year. Some of our island’s favourite Singaporean dessert flavours play a key role in informing Crowne Plaza’s new collection of snowskin mooncakes with each box comprising four assorted flavours – Mango Pomelo, Orh Nee (Yam Paste with Gingko Nuts), Kueh Salat and Pandan Kaya.

The Mango Pomelo snowskin mooncake is a study at mastering the golden ratio of mildly bittersweet pomelo flavour versus sweet, tangy mango to create a heady flavour that we would gladly have second helpings of. The Orh Nee snowskin mooncake works well because the yam plays up its smooth, creamy qualities while the boiled gingko nuts add a nice bite to the mooncake. The Pandan Kaya snowskin mooncake is quite the delight with its rich, creamy pandan-infused coconut custard. Kueh Salat has received much attention in recent years so its latest incarnation as a mooncake, complete with a beautiful blue pea flower snowskin, is received with open arms.

Filled with almonds, white sesame seeds, macadamia nuts, walnuts and buah keluak, the newly-introduced Nyonya Mixed Nuts baked mooncake presents a delicious medley of sweet and savoury flavours.

Crowne Plaza’s enduring favourites – such as traditional baked mooncakes like White Lotus Paste with Double YolkWhite Lotus Paste with Single YolkLow Sugar White Lotus Paste with Macadamia Nuts – as well as the novelties are available for sale at the lobby lounge and online store. They also have mooncake booths at Raffles Place’s Change Alley and other locations. Mooncakes are presented in an elegant gift box made from recycled material with floral motifs in a vibrant shade of plum – perfect for the gram!

Buah keluak sets aside its kerongsang and emerges in an evening dress for a newly-introduced Nyonya Mixed Nuts baked mooncake – great match for the elegant gift box in a vibrant shade of plum.

Now that Mid-Autumn is nearly upon us, Carlton Hotel Singapore has released its new range of mooncakes and all that handcrafted goodness can be brought home in a sleek Tingkat mooncake box awashed in shades of purple, lilac and blue.

Their two new flavours are absolute essentials on the Mid-Autumn haul. The Mini Baked Custard Mooncake, baked to a golden-brown hue, is a creative spin on the popular Custard Bun at Wah Lok. Send it for a quick sesh in the oven or microwave for a molten custard filling; you will also find that the hint of savoury salted egg yolk perfectly complements the sweet custard. The Mini Black Forest Snowskin Mooncake, on the other hand, features a decadent Valrhona chocolate base, fresh pieces of cherry and cherry ganache.

Time and again, it has been proven that Carlton’s Mini Walnut Moontarts with Egg Yolk, a signature creation handcrafted by the Wah Lok team, and Mini Mao Shan Wang Durian snowskin mooncakes are popular so you may wish to order them in advance.

With a consideration for healthier options, low sugar mooncakes like Mini Walnut Moontart and White Lotus Paste Mooncakes are both available to consumers seeking guilt-free indulgence. Assorted Mini Berrylicious Snowksin Mooncakes are made with 20% less sugar which sounds like an absolute boon. Winding up in front of the telly and polishing off an entire Traditional Mixed Nuts Mooncake filled with almond seeds, walnuts, tangerine, winter melon, sesame seeds and melon seeds is, in our opinion, quite an awesome, wholesome treat.

Tip: 30% off all mooncakes for selected credit/debit card holders before 17 August 2020.

In pure Madame Fan style, JW Marriott’s traditional and contemporary mooncakes are tastefully presented in a red box that exudes classic allure.

They have hit the nail on the mooncake with two new flavours, designed to be easy on the eye and a pleasure on the palate. This baked single yolk handcrafted mooncake is where two starlets meet – lychee and lotus paste.

The limited edition Peranakan-Inspired Gift Box Set by internationally-acclaimed fashion designer and artist Benny Ong is a collector’s item.

An octet of snowskin mooncakes featuring two bold flavours: Hennessy X.O. Chocolate and Yuzu Sake

Shangri-La Hotel Singapore leads the way with a stylish collaboration with internationally-acclaimed fashion designer and artist Benny Ong. The limited edition Peranakan-inspired Gift Box Set, designed as an heirloom to mark this enduring festive occasion, is dressed in motifs typically found on Peranakan-style heritage blue-and-white plates. Each box comprises four pieces of baked mooncakes filled with bak kwa, pork floss and nuts. Reflecting the tapestry of Southeast Asia and Singapore, the flavours are at once smoky, sweet and lightly salty.

The luxury hotel’s approach to snowskin mooncakes is novel. An octet of mini mooncakes offers two flavours: the Hennessy X.O. Chocolate Mini snowskin mooncakes show how chocolate accentuates the rich, dark cocoa notes of cognac. The citrus notes of yuzu, on the other hand, complement the subtle sweetness of sake in the Yuzu Sake Mini snowskin mooncakes

Shangri-La’s Chef Damian Piedrahita, who specialises in plant-based cuisine, was instrumental in conceptualising the limited edition Mini Vegan Mooncakes available in a set of eight. He looked to Japan and Sri Lanka to curate ingredients that discerning gourmands would approve of: organic cinnamon from Sri Lanka and lotus paste come together to envelope a sphere of sweetened pumpkin made from Japanese pumpkins. Caramelised pumpkin seeds lend a wonderful crunch to a smooth and rich pastry. We love the packaging just as much – the on-trend dark green box comes with a lantern lit by LED lights. The prospect of going for a passegiata on a bright Mid-Autumn night with a stylish accessory in hand makes us truly over the moon.

Shang Palace’s Executive Chef Mok Kit Keung’s Signature Mini Baked Custard with Bird’s Nest makes a long-awaited comeback – every bite promises to be rich with slivers of bird’s nest and creamy custard.

Classics such as Shang Palace Four Treasures and Black Sesame with Taro are well-loved favourites found on the order list.

Tip: Early bird discount of 30% for selected items till 16 August 2020. Order online to enjoy 20% off classic baked mooncakes.

While we are enamoured with the stylish lantern, we are also genuinely interested in the flavours of the Mini Vegan Mooncakes. These are conceptualised by Shangri-La’s Chef Damian Piedrahita who specialises in plant-based cuisine.

Singapore jazz band Evolution Quartet launches debut album 'Reflections'

Tip: Enjoy 40% off mooncakes for a limited time only, use code MA40 at checkout. See corporate website for deets on discount. With a minimum spend of $120 (before taxes) at the e-store, receive a $40 room credit voucher to be used on your next hotel stay.

Buah keluak sets aside its kerongsang and emerges in an evening dress for a newly-introduced Nyonya Mixed Nuts baked mooncake – great match for the elegant gift box in a vibrant shade of plum.
