We love perennial favourites such as Silver Lotus Paste with Melon Seed, Silver Lotus Paste with Single Yolk and Silver Lotus Paste with Double Yolk. This Mid-Autumn Festival, InterContinental Singapore’s collection of novelties are informed by the luxury property’s rich heritage and deep-seated roots in the historic and cultural district of Bugis. Crafted around classic Peranakan desserts, the new snowskin mooncakes are delicately formed in Man Fu Yuans signature blooming rose silhouette. Heritage is in full bloom with four voluptuous flavours on offer. Bite into the Chendol and you will detect gula melaka with red bean, coconut and pandan jelly. Baked Mooncake with Pandan Coconut and Chendol

Mandarin Oriental, Singapore’s Cantonese restaurant Cherry Garden looked to tea for inspiration for its 2020 collection this season.  

 

As part of its baked mooncake series, oolong, given its toasty,  tannic undertones and fragrance, was chosen to star in the Lugu Oolong Tea with melon seeds mooncake. Equally memorable is their other new creation Matcha Red Bean as green tea and red beans is a match made in heaven. 

 

The snowskin series features a pair of equally delectable treats that only an esteemed ingredient like tea can offer: Oolong Tea Infusion with Dried Apricot and Pumpkin Seeds as well as Exotic Passion Fruit with Candied Pineapple and Mango Mochi. It is worth noting that for the latter, the pineapple chunks are sweetened for eight hours and dried for two days; the springy mochi, made from mango and passion fruit juice, enhances the tangy notes of this inspired morsel of goodness.  

 

Guests can be assured favourites from previous years – the Low Sugar Silver Lotus Paste with Double or Single Yolk as well as the Lychee Martini and Chocolate Truffle – are still available this year.

Basilico Executive Chef Angelo Ciccone took prized Amarena cherries from Bologna and paired them with Sicilian pistachios and the honeyed sweetness of dried figs in the Pistachio, Fig and Amarena Cherry snowskin mooncake.

It’s all hands on deck for Regent Singapore this year as its award-winning dining establishments come together yet again to contribute to the luxury hotel’s colourful canvas of mooncake offerings. Broad, lively strokes, at times vivid but always brilliant. The partnership between restaurants had its roots firmly plated in in 2018, when Summer Palace’s Chinese Dim Sum Chef Leong Kwok Sing partnered with Manhattan, then #3 on The World’s 50 Best Bars, to introduce two Manhattan-exclusive snowskin mooncake variants with a barrel-aged Sazerac 6-year-old rye and La Louisiane Cocktail. The alcoholic cores were a hit against creamy coffee and yuzu fillings. 

 

This year, head bartender of Manhattan, Sophia Kang, once again looked to the bar’s impressive collection of dark rums to dream up a tropical combination of plantation rum, spiced coconut and yuzu in the Macapuno mooncake.

Michelin one-star Summer Palace’s Chef Leong took care of the classics and gave us the Signature Black Sesame Paste featuring a stunning juxtaposition of cushion-soft pearlescent skin and a jet-black filling of finely ground black sesame. Other mooncakes on offer include the White Lotus Paste with Salted Egg Yolk and Melon Seeds and Mao Shan Wang Durian. Chef’s new Orange and Pine Nuts snowskin mooncake features a smooth tangy filling studded with buttery pine nuts for crunch and is clad in a coral pink hue.
